Baked Salmon with Shrimp Scampi

You don't have to serve the scampi with this salmon but they go pretty well together and both are cooked in the oven, so it works. 


I served the two with mashed potatoes and it was a really great meal and very easy.

Ingredients for Baked Salmon:
  • 2 Tb evoo 
  • 1 Tb melted margarine 
  • 3/4 t dried basil
  • 1/2 t salt
  • 3 Tb lemon juice
  • 1 t dried parsley
  • Dash of dill weed 
  • 2 salmon fillets


Mix ingredients in gallon bag, add 2 fillets of thawed out, fresh salmon and marinate in fridge 1 hour. 
Preheat oven to 375*. Bake 35-45 minutes in foil covered baking dish or until fish flakes easily.

Ingredients for Shrimp Scampi:
  • 1/2 cup melted butter
  • 2 Tb dijon mustard
  • 1 Tb lemon juice
  • 1 Tb minced garlic
  • 1 Tb dried parsley
  • 2 lb raw shelled and deveined large shrimps


Stir all ingredients but shrimp in a medium baking dish. Add shrimp and stir until coated. Will look almost like the shrimps are coated in bread crumbs but don't worry, it will all melt into an amazing sauce once it's all said and done.  Cover with foil. Preheat oven to 375* and bake for 15 minutes or until shrimps are pink.
