Nutless Banana Bread

I suppose if you really wanted to, you could add nuts to this recipe.  (1/2 cup chopped walnuts) We just happen to like our banana bread without. It is really moist and fabulous. 


Ingredients:
  • 1/2 cup room temperature butter 
  • 1 cup white sugar
  • 2 eggs
  • 1 t vanilla extract
  • 1 t lemon juice
  • 1 3/4 cup flour 
  • 1 t baking powder
  • 1 t baking soda
  • 1/2 t salt
  • 1/4 t cinnamon (I usually put a touch more)
  • 1/8 t cloves (I usually put a touch more)
  • 1/2 cup sour cream
  • 2 medium bananas, mashed (= 1 cup mashed)


Preheat oven to 350*. Grease a 9x5 loaf pan. In a large bowl, cream together butter and sugar. Add eggs, vanilla and lemon juice. In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon and cloves. Stir into the butter mixture until smoith. Fold in the sour cream and banana. Spread evenly into pan and bake uncovered for 60-65 minutes or until toothpick inserted comes out clean and top is golden. Cool for 10 minutes.
