Cauliflower Soup with Artichoke Hearts & Bacon

This winter meal has very few ingredients and takes maybe 20 minutes total.  Not the healthiest but it's awesome.


Ingredients:
  • 5 cups fresh cauliflowerets
  • 2 (14.5 oz) cans chicken broth
  • 1/2 cup heavy whipping cream
  • 1/2 t ground nutmeg
  • 1/2 t salt
  • 1/8 t pepper
  • Chopped canned artichoke hearts
  • Shredded Asiago cheese
  • 8 slices of cooked bacon, crumbled


Simmer cauliflower and broth for 15 minutes or until tender. Puree with immersion blender if you have one or transfer to blender and blend until smooth and return to pot. Stir in whipping cream, nutmeg, salt, pepper and artichokes; heat through. Pour into bowls and top with cheese and bacon.

Makes approximately 4 bowls.
